In seven years, organic matter content in Matthews’ fields has gained a point and a half, and the curve is getting steeper now. “So it’s not taking us decades to make that organic matter change,” he says. “It can happen faster than people think. I mean, we’re farming in a desert, after all … but we’ve changed the soil. And you can change the soil, even in a desert.”

“The bottom line is,” says Mike Thornton, “if you have a lot of smoke, you can expect potatoes to be less productive, especially top-grade potatoes.” He found that yield in the smoke-treated plots dropped 2% to 3% each year.

Someday I realize that Dave and I will probably spend all our time wandering the fields looking for lost shovels. At that point, I might not remember my name, but I will be able to tell you that Ace is “the place with the helpful hardware man.” Maybe that’s all I really need to know.
