Cheese consumption’s phenomenal increase: Will it continue?

Many significant things have occurred in the dairy industry during my lifetime. High on top of my list is the phenomenal increase in U.S. cheese consumption. In 1950, per-capita cheese consumption was 7.7 pounds. In 2012, the most recent data available, per-capita consumption of cheese was about 33.5 pounds. A person today, compared to 62 years ago, is eating 25 pounds more cheese per year.

Resolutions for cooperative members

According to USDA statistics, there were 133 dairy cooperatives in the U.S. in 2012. These 133 cooperatives had 45,100 members. Based on this number, it is estimated that more than 80 percent of the nation’s dairy farmers market their milk through a cooperative.

As we all know, productivity measured in those terms has increased significantly over the years and continues to do so. Average U.S. milk production per cow has doubled in the past 50 years. CME commodity prices and a dairy farmer’s milk check

A common question I receive is: What is the relationship between my milk price and dairy commodity prices trading on the Chicago Mercantile Exchange (CME)? In answering that question, let me begin by saying the California state order does use CME cheese and butter prices in determining a portion of that state’s milk prices. But federal milk marketing orders do not use CME prices.

A look at New Zealand milk prices

New Zealand is a fascinating country. It has about 4.6 million dairy cows, which is more cows than people. New Zealand annual milk production of about 42 billion lbs is only 20 percent of the U.S. milk production, but the 42 billion lbs is produced in a country that is about the same size as the state of Colorado.

Since then, orders have been implemented, amended, terminated, challenged in the courts, tinkered with by Congress, debated, discussed and cursed. Changes coming to who calculates, distributes genetic evaluations

The USDA has calculated and distributed some form of dairy cattle genetic evaluations since 1926. These genetic evaluations have played a major role in the average annual milk production of a U.S. dairy cow tripling in the past 50 years, from about 7,000 pounds per cow to now more than 21,000 pounds. And these evaluations have helped the U.S. become the world’s leader in dairy cattle genetics.

Are we giving up on fluid milk sales?

Fluid milk sales continue to decline. Recently released USDA numbers show 2011 fluid milk sales at 53.2 billion lbs. Back in 1990, the number was around 54.8 billion lbs., nearly a 3 percent decline. Yet, during this period of time the U.S. added 20 percent more potential milk drinkers. Per-capita consumption of fluid milk has dropped from 220 lbs. in 1990 to less than 178 lbs. today, and the numbers continue to worsen. Through the first five months of 2012, the USDA reports fluid sales are down 2.5 percent.
