To understand the right order of ingredients that should go into the mixer wagon, we must consider the physical properties of the ingredients that affect mixing, such as size, shape, density, water absorption capacity (hydroscopy), static electricity and adhesiveness. Starting in 2011, the somatic cell count (SCC) in bulk tank milk (BTM) must be less than 400,000 cells per ml for milk or milk products exported to the European Union (EU).
