La Clare Farms finds niche with dairy goats, champion cheese

June 11, 2014
Peggy Coffeen
The on-site café, retail store and creamery at the Hedrich family’s La Clare Farms is as unique as the flavors of their hand-crafted champion cheeses, thanks to one special ingredient – milk from their 600 dairy goats. Newly opened last November, the farmstead facility located along the lake front in Pipe, Wisconsin, is a dream come true for Larry and Clara Hedrich. They sought a way to add value to their product and bring multiple family members into the business, all while educating the public on where their food comes from.

June 11, 2014
Ashley Mohn Student, Delaware Valley College Hometown: Womelsdorf, Pennsylvania “Last year, I served as a dairy ambassador for Berks County. Some of my June Dairy Month highlights were sampling dairy products and interacting with consumers at a Giant Foods grocery store. Promotions make a difference; labels are key to consumption

June 11, 2014
Ashley Messing-Kennedy
All it takes is a walk through the grocery store, and you will begin to realize how important marketing is today. In each food product, there are distinct differences between labels, even when the product is something as basic as a gallon of milk. We all remember the “got milk?” campaign and have begun to see commercials and materials for the new “Milk Life” campaign. But what about those local campaigns we see in our home state or regions? We might be surprised about the influence they currently have on consumer choices and the influence they could have in the future.

Will they come? On-farm visitor centers draw tourists

June 11, 2014
Karma Fitzgerald
“If you build it, they will come.” Yes, it’s a line out of a Hollywood movie. It worked for Kevin Costner’s baseball field in the 1989 film “Field of Dreams,” but will it work for a dairy? If a producer builds a visitor center on the dairy and invites tourists to learn more about the industry, will people come?

Seeing is believing: Make it a goal to host a farm tour this year

June 11, 2014
Jessica Ziehm
Ever get frustrated about the disconnect between farmers and consumers? Why can’t they trust us to do our job? Why do they have to believe everything they hear from our adversaries? As dairy farmers, we are in the driver’s seat to help solve that problem – and it’s quite simple. We can invite the public onto our farm for them to learn first-hand about what we do and why we do it.

Design facilities to handle down cows

June 11, 2014
Michael Costin
Earlier this year, the dairy industry of Wisconsin witnessed the release of a video by an animal rights organization that was taken on a farm in Wisconsin. As a result of that video, the producer portrayed was dropped by the processor. The ramifications of this decision reverberated throughout the dairy industry. Many of our clients asked what they could do to prevent a similar event from affecting them.
