A research team led by Dr. Steve Labrie (Laval University) looked at the impact of reducing the sodium content on the safety, texture, functional properties and taste of Canadian cheddar, mozzarella and soft cheeses.

They found reducing sodium in cheeses could negatively affect the ripening process, cheese hardness and melting properties.

Alltech symposium tries to ‘create something different’

To improve on last year’s symposium, Pearse Lyons, founder and president of Alltech, and his team thought of the 2012 symposium as “boring.”

“We never review what we did right,” Pearse Lyons said. “Last year’s symposium was fantastic, but we wrote down one word and only one word. We should take the approach that last year’s [symposium] was boring. Start again and create something different.”

This year’s symposium was held May 19-22 in Lexington, Kentucky. Nearly 2,400 people attended the event from 72 different countries.

New robot facility helps British Columbia dairy farmer do more with less

Brad Romyn has a lot of reasons to smile these days. The third-generation dairy farmer from Notch Hill, British Columbia, has made significant changes to his operation which have resulted in a lot more time to spend with his family and huge improvements to his herd’s milk production.

The Romyns’ old barn was a 100-by-60-foot freestall barn with 7-foot stalls.

The 2012 corn crop started out with early planting and emergence before it took a turn for the worse, tormented by a severe and widespread drought across Canada. Yields suffered, and the environment was just right for moulds such as fusarium to prevail. Aspergillus showed up in some of the Western provinces but was still not as prevalent in eastern Canada as the fusarium and penicillium moulds.
